A Sicilian-inspired Italian restaurant bringing ancient grains, Etna wines, and in-house craft to Salt Lake City
Salt Lake City, Utah - Opening Wednesday, March 18, 2026, ’mina is a Sicilian-inspired Italian restaurant located at 439 E. 900 S. in Central 9th. Built by a team from Sicily and led by co-owners Giro Messeri, Danielle McGuire, and Adam Rosh, ’mina brings a depth of culinary authenticity and hospitality rarely seen in the region.
Named for Taormina, the seaside town where Messeri grew up, ’mina is rooted in Southern Italian tradition while thoughtfully designed for Salt Lake City’s evolving dining scene.
At the center of the kitchen is daily craft. Pastas are made in-house using stone-milled ancient grains sourced from Sicily. Breads are baked from scratch. Pastries are prepared entirely in-house by Sicilian pastry chef Francesco Biondo, including cannoli filled to order and Torta Setteveli, the celebrated Sicilian chocolate and hazelnut cake originating in Palermo. Housemade gelato is churned daily in small batches using traditional Italian technique.
Core ingredients such as olive oil, capers, and specialty flours are imported directly from Sicily and other regions of Italy, while seasonal produce and premium meats are sourced from Utah farms and ranches.
Executive Chef Leonardo Li Mura leads the kitchen, joined by a culinary team with deep ties to Sicily. The cocktail program was developed in collaboration with Sicilian mixologist Daniele La Corte, blending citrus, amari, and modern technique.
The wine list, curated by Messeri, highlights producers from the volcanic slopes of Mount Etna alongside selections from Tuscany, Piemonte, France, and the United States.
“For me, wine is personal,” says Messeri. “Many of these bottles come from vineyards I’ve walked myself, from the volcanic slopes of Mount Etna to small family cellars near the sea. They’re wines that carry a sense of place and memory for me.”
While the food reflects Sicily, the intention is broader.
“We’re building this around joy and connection,” says Rosh. “If guests leave feeling more alive and more connected to the people at their table, we’ve done our job.”
